Oats Pancakes

Ingredients:
1cup oats
1cup grated bottle gourd
1cup milk
Chat masala
Ginger green chili paste as per taste
Coriander and mint leaves.

Method:

Combine oats dudhi and milk and give rest for 15-20 mins
Then add salt, chat masala , ginger -green chilly paste , corrainder and mint leaves !! Spread the batter on tawa and cook both the sides wid little oil on slow flame !! Ready to serve

Cheesecake

White chocolate cheesecake using agar agar

We all love cheesecakes. I always wanted to make one but feared how it make turn. There are so many recipes on cheesecakes. Yogurt based, baked ones which I recently came to know. I always thought it to be a dessert and hence no baking will be there. So I thought of taking a recipe which has no baking. I went through many recipes on YouTube and finalized one where I made some changes. But this recipe had gelatine and I wanted to use agar agar veg version. So this comes my invention which turned good.

9' spring pan
200 gm Philadelphia cheese
150 gm white chocolate
250 ml heavy whipping cream

1 1/2 cup cookie crumbs
1/4 melted butter

10 gm agar agar
200 ml water

1 1/2 cup mango puree
Use the same proportion of agar agar for jellies.

Method

  1. Grease the pan with butter and dust with flour.
  2. Take cookies. Grind in mixer to coarse powder. Add melted butter. Don't add lot of butter as it will make the base soft.
  3. Add this mixture to the pan and gently dab the mixture with base of a glass.
  4. Attach a plastic foil and keep the fridge for 1/2 hour.
  5. Now prior to whipping cream, keep the bowl and the whisk in freezer. This will help to whip cream to soft peaks. Now use the bowl and whip your cream.
  6. Melt the chocolate on double boiler. 
  7. Whisk the cheese to avoid lumps. Better to use electric blender.
  8. Add the chocolate. Whisk it again.
  9. Now add the whipped cream. Just fold the mixer with spatula.
  10. Using agar agar: Add the agar agar in cold water. Bring it to boil.
  11. Your spoon shouldn't show any particles and should be dissolved completely. (I followed the instructions showed the packet of agar agar). Agar agar starts to set at 35 deg. So just cool it a bit and add to cheese,chocolate and cream mixture. The cheese chocolate mixture should be warm as this will help agar agar to set.
  12. Pour this mixture over cookie crumbs kept to set.
  13. Keep this mixture overnight in the fridge.
  14. The cheesecake will be soft and a bit wobbly.
  15. Now I used mango jellies for decorating. For mango jellies make the agar mixture. Bring to boil and add puree. Let it set overnight. Use a  fruit scopper to scoop out jellies and decorate.

Fish Curry Karwar style

Hello friends,
My native place is Karwar. Fish is the staple food of Karwar cusine. I grew up eating this fish curry. My Mom makes lovely fish curry and you will be happy to know its just so simple.

Dry masala
Ingredients:

2 tbsp coriander seeds
1/2 tbsp udid dal
1/2 tbsp mustard seeds
1/2 tbsp rice
4-5 bedgi mirchi

Dry roast the above ingredients except mirchi. We usually store the roasted ingredients

Ingredients:
Any type of fish (Surmai, Rawas etc).
1cup of fresh coconut grated
1 onion finely chopped
1/2 tsp turmeric


Grind the dry ingredients, coconut, mirchi with turmeric into fine paste.

Method:

  1. In a wok add coconut oil, onion. 
  2. Fry till translucent.
  3. Then add the grinded paste. Salt as per taste.
  4. When it comes to boil add fish pieces. We usually add the head of the fish as well. It gives a good taste.
  5. The fish will get cooked in 10 min.
  6. You can garnish with coriander leaves if you want but not required. Serve with steamed rice.

Rawa Cake

Hello friends,
This is my first blog. I wanted to make a healthy cake for 1 yr old. I came across this recipe. I didn't find it again to thank the person but i will share this with you so can make your little one happy. Rather the older because my husband loved it more.
This is a traditional recipe. I am sure many of you must have tried it before. It is similar to sheera wadi in Maharashtra but came out really good.

Ingredients
1 cup rawa (semolina)
1cup milk
1cup curd
3/4 cup sugar(you can also take 1 cup for sweet lovers)
1/4 cup melted butter
1tsp baking powder
1/2 tsp baking soda
1tsp vanilla essence
Dry fruits

Preparation

  1. Mix milk, curd, sugar and butter. 
  2. Roast the rawa until slight brown. After it gets cool add to above mixture and keep closed for 1 hr.
  3. Then add baking powder, baking soda and vanilla essence and dry fruits.
  4. Bake for 200 deg for 10min.
  5. You can also add mango pulp or ananas for flavor.
I didn't add any pulp still it tastes good.
